We love Salads!
From the start, we have been fascinated how a good salad can compliment and round out our lunches. Early inspiration was drawn from, Salad Days, by Marcel Desaulniers. The basics of this cookbook gave the kitchen a great starting place. 16 years later, we have seen how much you love a good salad as well.
Somewhere early on Marcus came upon the ingredients for The Red Radish Garden Salad or simply “That Salad” as many customers refer to it as. It was an instant hit and became the hallmark of our corporate catering menu. So lets start things off with sharing the basics, we hope you enjoy!
The great thing about this The Red Radish Garden Salad is its versatility. It can be served with any variety of menus, or as the star of the meal, topped with some grilled chicken or roasted turkey.
Here are the main ingredients and how we layer it:
Chopped lettuce –We like a mixture of crisp romaine, baby spinach and sweet spring mix
Whole Mandarin orange segments (drained)
Grape or Chopped Cherry tomatoes
Crispy French Fried Onions – We like French’s
Roasted & Salted Sunflower seeds
Top it off with your dressing of your choice. Of course we are partial to our Zesty Ranch and Feta Dressing, but often serve it with other favorites such as Raspberry or Balsamic Vinaigrette.
Another nice dressing we really enjoy follows. Here is the recipe for
Smoked Cider Vinaigrette:
2 Tablespoons Cider vinegar
6 Tablespoons Salad oil
1 teaspoon Smoked Paprika
1 teaspoons chopped Green Onion
1 Tablespoons Brown Sugar
1 Tablespoons Honey
1 Tablespoons Brown Mustard
Pinch of Red Pepper flakes
Mix all ingredients in a blender till combined.
